Ingredients 1kg Mutton, diced
2 Large Onions, roughly diced
2-3 Garlic Cloves, grated
1inch cube fresh ginger, grated
2-3 Fresh Green Chilli’s, sliced
Handful fresh coriander
1-2 tsp Salt
1 tsp Cumin powder
1 ½ tsp Coriander powder
2 tsp red chilli powder
1 tsp Turmeric
1 tsp Garam Masala
2-3 Bay leaves
1 Cinnamon Stick
2 Green Cardamom pods
Add the diced Mutton to a deep pan, with 500ml Water, add the onions, turmeric, salt, cinnamon stick and cardamom pods.
Bring to the boil, reduce heat and simmer for 1 hour on a medium heat.
Add the Grated Garlic, Grated Ginger, Sliced Chilli’s, Cumin Powder, Coriander Powder, Red Chilli Powder and Garam Masala. Mix well.
Simmer again for 1 ½ to 2 hours.
Serve with cooked rice, mango chutney and pappadoms.
