Yes they’re chips, but this indulgence is with a hot and spicy addition. If you’ve never heard of, or tasted cassava, then imagine a potato like substance and sensation but add in a subtle extra sweet flavour of the tropics. Native to South America, tapioca must be cooked well before consumption! We wouldn’t recommend these with beans and chips, but restaurants may serve them as a side order or accompaniment to the main course. But a word of caution – cyanide believe it or not is present in raw cassava, so should always be thoroughly boiled or deep-fried to remove any toxins. Try them and tell us what you think!
Ingredients (Serves 3-4):
500g Crown Farms Fresh Frozen Tapioca (Cassava) Our Product Code 16CSC
4-5 Cloves of Fresh Garlic Our Product Code 21GAR
8-10 Green Chillies (small) Our Product Code 21GC
Salt, to taste Our Product Code 45CS1
Oil 150ml approx (KTC Vegetable Oil) Our Product Code 50V015
Method:
- Boil cassava in salted water, until tender and cooked. Drain and let cool for a few minutes.
- Peel garlic cloves, and chop the green chillies (roughly will do).
- Add these to a food processor or pestle and mortar, add a little oil, enough to make a smooth paste.
Deep fry the cassava in moderately heated oil until crisp and just beginning to brown. Drain on absorbent paper and put aside.
Pre heat oven to 250C. Place cassava chips into a bowl. - Add the chilli and garlic paste to the bowl and mix until the chips are well coated.
- Add the coated chips to a baking tray.
Place the tray into the oven and bake for 10 minutes.
Season to taste and serve immediately.
Serving Suggestion:
Best served as a side dish or compliment to any complimentary meal.
